Cream of Asparagus Soup

appx half gallon, 250 calories per 8oz serving.

Sauté diced onion in olive oil and salt over medium heat in a 4 quart pot till soft and translucent.

Onion, 1 medium peeled and diced

Seasoning Salt, couple dashes

Olive Oil, 1TBS

Deglaze pan with white wine until reduced by half

White Wine, 1/4C

While onion is softening, peel and dice potato.  After white wine is reduced add broth to pot and toss in potatoes. Simmer till potatoes can EASILY be broken with a fork.

Veggie Broth and/or Chicken Broth 6C

Russet Potato, 1 Pound (about 2 medium)

While potatoes are cooking, rinse asparagus and chop into roughly 1 inch pieces, reserving tips for garnish.  Add asparagus (not tips) to soup pot and let them cook until potatoes are done.

Asparagus Spears, 1#

Add spices and cream and simmer 8-10 more minutes.  If you use half and half you must be sure to add it at the end of cooking as it can “break”.  Using immersion blender,  beat up the soup until it is as smooth as possible.  At this point, the soup is either ready if you like all of the fiber and chunkiness, OR, you can put it through a chinois or fine mesh strainer to make it velvety.  If you’re going to serve it chilled this is the best way. Garnish with raw or blanched tips.

Nutmeg, 1/4tsp

Cayenne Pepper, 1/4tsp

Heavy Cream or Half & Half, 1C

SECRET TIP!: If you want a more vibrantly colored soup, blanch your asparagus for 30 seconds in boiling salted water, then remove to iced (literally) water to shock the asparagus.  The asparagus will remain much greener through the soup cooking process if you do this.
