The COW: - Indulge in that most unctuous of proteins: BEEF. A primer and bites or dinner with accoutrement explaining tender cuts vs. connective tissue cuts. Add Wine Pairings if you like; believe it or not different cuts benefit from different types of wine!
The Original Thanksgiving – Delight your palate with updated versions of REAL Thanksgiving food prepared and served from the Natives/Pilgrims with a fun history lesson. Think Polenta, Seafood, Venison - NO TURKEY!

Lula’s Roasted Sweet Potato & Chorizo Spoon Bread Bites w/ Herbed Goat Cheese (gf)
Roasted Sweet Potato & Chorizo Spoon Bread B
Chorizo, 8oz, bulk |
Oven to 425. Cook chorizo, drain grease, cool. Toss w/ baking powder. Sub 12-15oz black beans for VG |

Water, 2C (or sub weak chix broth for base) |
IN pot, bring to boil water or broth with butter. |

Corn Meal, white or yellow, 1/2C |
Add cornmeal, whisking to prevent lumps. Cook covered, stirring occasionally, for 15-20 minutes till grits are creamy. |

Sweet Potato, manually creamed, 1 med |
Whisk in Sweet Potato and Chorizo. This should cool grits down enough to add below: |

Eggs, 2, well beaten |
Whisk milk into eggs and pour into grits while stirring quickly. Pour into mini muffin tins almost to top, and bake for 15 minutes or so. |

Whip cheeses, adding cream to desired consistency. Dollop on top of warm cakes. Makes about 48. |
