The COW: - Indulge in that most unctuous of proteins: BEEF. A primer and bites or dinner with accoutrement explaining tender cuts vs. connective tissue cuts. Add Wine Pairings if you like; believe it or not different cuts benefit from different types of wine!

Basil & White Cheddar Corn Pudding
Basil & White Cheddar Corn Pudding
Preheat oven to 325. Beat all in big bowl till mixed & frothy. I put eggs in first & beat them then add other stuff.
Cream, 3.5 cups
Eggs, 6
Salt, 1 tsp
Mix all spices together in separate bowl.
1 TBS Old Bay Seasoning
1 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp salt
1/4 tsp nutmeg
2 pinches red pepper flakes
Dump corn, basil and 1/2 cup of the cheddar into spice bowl and toss to coat. You can sub white/yellow corn mixed but for the love of GOD don’t use all yellow. White is SWEETER!
24 oz shoepeg (white) corn
(about 4 cups) thawed if using frozen
1 cup shredded extra sharp white Vermont cheddar
1 cup fresh basil, chiffonade
Coat pan lightly with the butter. Dump corn mixture in and slowly pour in cream mixture. Top with remaining ½ cup cheddar. Bake appx 1 to 1 1/2 hours, uncovered, rotating pan halfway through if your oven cooks unevenly.
