A Traditional Italian Christmas
The Feast of the Seven Fishes
I’m not Italian, but I swear the blood is there somewhere - I show my love through food. Several years ago I gave up on everyone’s idea of “traditional” holiday food, because I have A D D and get bored. :) I started researching other cultural expressions of the holidays and landed on The Feast of the Seven Fishes as a fave. This feast is actually an Italian AMERICAN tradition, honoring the Catholic tradition of meatless fasting.
A fabu amuse is my re-interpretation of the classic “Lobster Newberg”, which I put in phyllo cups for finger food…; you can see an image at the top of the page. To cut that richness I serve alongside it a simple shrimp cocktail with Lula’s AMAZING Remoulade. You will also note that I don’t include all “seven” fishes - the number varies by family. Soup is usually a starter for me in the winter - so my Blue Crab Chowder fit the bill! But it’s not as pretty as my LInguine con Pesce Affumicato (amazing Smoked Trout lovingly prepared by my Gordon) that I serve next, so here’s a picture of THAT.
SCRATCH. SEASONAL. LOCAL.
THE STAR OF THE SHOW
I absolutely adore salmon, and the royalty of salmon is KING. Rich, buttery, and expensive, I just don’t care. Here I’ve pan roasted with the skin ON (amazing nutrients!) and dusted with cajun spices, topping sauteed spinach and crispy fried potato coins. You should really serve it with the skin side up, but for aesthetic reasons I turned it over for “snapping”. For closure (and roughage) I serve the best Caesar Salad in the world…MINE. The dressing of course has anchovies in it so that makes SIX. This feast is finished with simple fruit and cheese, alongside a refreshing glass of prosecco. If you’re interested, I chose specific wines to pair with each course - email me and I’ll give ‘em to you. BUON APPETITO!
